Curried carrot soup
Carrot is a very versatile ingredient for soups. Combine it with lime and mango, or try this curry and coconut combination.
- 400 g carrot
- 50 g potato
- 50 g chopped onions
- 700 ml vegetable stock
- pepper & salt, to taste
- 2 tsp curry powder
- 100ml crème fraîche or coconut milk
- Peel the carrot and potato and cut them into 2 cm cubes.
- Place all the ingredients except for the crème fraîche into the soup maker, close the lid and press the cream soup program.
- When the soup is ready, open the lid, mix in the crème fraîche and pour into bowls or glasses.
