1. Separately put the preserved sausage, water chestnuts, carrots and celeries into the bowl of the OnionChef chopper to cut into small pieces.
2. Combine 1/2tsp of oyster sauce, sugar and 2tbsps of water and stir well.
3. Put 4/5 of the dried black moss and the oyster sauce mixture into the baking tray of the Airfryer. Cook for 1-2 minutes until the oyster sauce mixture is absorbed and set aside.
4. Put the cashew and pine nuts into the baking tray of the Airfryer, fry for 3 minutes at 180C until crispy and set aside.
5. Put the dried oysters into the baking tray of the Airfryer, fry for 9 minutes at 180C until crispy and set aside.
6. Put 30g of dried oysters into the bowl of the OnionChef chopper, cut into small pieces.
7. Put the chopped dried oysters and preserved sausages into the baking tray of the Airfryer and fry for 3 minutes at 180C. Then add in the chopped water chestnuts, carrots and celeries and fry for 3 minutes.
8. Add in the rest of the dried black moss, water, oyster sauce and Hoisin sauce and cook for 8 minutes. Then cook for another 5 minutes at 200C until the sauce is well absorbed.
