Oyster Rice Soup with Minced Pork and Dried Flatfish

Ingredients

  • Dried flatfish (cut into small pieces) 15g
  • Pork (diced) 100g
  • Baby oyster (blanched) 200g
  • Dried seaweed (soaked) 4g
  • Chinese celery (diced) 45g
  • Ginger (sliced) 3g
  • Water 750g
  • Spring onion (chopped) 20g
  • 2 bowls of rice
  • Sea salt, as appropriate
  • Sugar, as appropriate
  • Pepper, as appropriate
  • Marinade :
  • Pork
  • Salt ⅓ tsp
  • Sugar ¼ tsp
  • Pepper, as appropriate
  • Chinese yellow wine 1 tsp
  • Corn starch 1 tsp
  • Sesame oil 1 tsp
  • Oyster
  • Salt ⅓ tsp
  • Sugar ¼ tsp
  • Pepper, as appropriate
  • Chinese yellow wine 1 tsp
  • Corn starch 1 tsp

Directions

  • Put the pork in the blender jar. Close the lid.
  • Turn the rotary knob to Speed 3 to mince. Take the minced pork out and marinate for 15 minutes.
  • Marinate the oyster for 15 minutes.
  • In sequential order, put the dried flatfish, seaweed, ginger, Chinese celery and water in the blender jar. Close the lid.
  • Turn the rotary knob to Asian soup, adjust the cooking time at 25 minutes. Press OK to start cooking.
  • When 10 minutes remains, add the minced pork. Close the lid and keep cooking.
  • When 5 minutes remains, add the oyster. Close the lid and keep cooking.
  • When the cooking is done, add salt, sugar and pepper to taste. Add rice and spring onion to serve.
