Pina Colada Chicken

Ingredients

  • Chicken 1 pc (Around 1 kg)
  • Fresh Pineapple 4 slices (Cut into chunks)
  • Fresh mint leaves a small bunch (Chopped)
  • Coconut milk 100 ml
  • Crush pineapple & Juice 250 ml (Canned)
  • Honey 4 tbsp
  • Dark rum 4 tbsp
  • Fish sauce 2 tbsp
  • Ginger 1 tbsp (Minced)
  • Pepper
  • Salt

Directions

  • 1. Remove chicken's haslet, wash and dry it. Do not remove skin.
  • 2. Mix seasoning and spread evenly inside and outside of the whole chicken. Leave to marinate for at least half day or even overnight in the fridge.
  • 3. Wrap up chicken and seasoning with a piece of aluminium foil. Place the parcel into the basket. Airfry at 180℃ for 45 minutes.
  • 4. Open the parcel, toss in fresh pineapple chunks. Leave the parcel opened and turn the temperature down to 160℃ and continue Airfrying for 10-15 minutes.
  • 5. Serve chicken on a shallow plate, sprinkle with chopped mint leaves.
