Dice the tomatoes, add to the baking tray together with the shallots and garlics, pour in the red wine, and season with salt.
Cut the lobster sideways in half, and place on top of the tomatoes. Add 2 small lumps of butter onto the lobster, put the baking tray in the Airfryer and cook for 8 minutes at 180°C.
Remove the lobster, add the rest of the butter in the cooked tomatoes, cook for another 4 minutes until the sauce is thickened.
Pour the sauce alongside the lobster to serve.
