Crispy Shrimp Roll with Thai Style Vegetable Sauce

Ingredients

  • Bean curd wrappers 2 sheets
  • Prawn 350g (Minced)
  • Celery stalks 2 pcs
  • Carrots 50g
  • Coriander 2 sprigs
  • For the sauce:
  • Small cucumber 1 piece (Sliced)
  • Fresh pineapple 60g (Diced)
  • Red bell pepper 30g (Diced)
  • Thai sweet chili sauce 2 tbsp
  • Lime juice 1 tbsp
  • Sugar 1/5 tbsp
  • Coriander 2 sprigs
  • Water 1/4 cup
  • Corn flour 1.5 tbsp
  • Vegetable oil 1 tbsp
  • Seasonings:
  • Salt 1/3 tsp
  • Worchester sauce 1 tbsp
  • Sesame oil 2 tsp
  • Pinch of white pepper
  • Vegetable oil as appropriate

Directions

  • Finely dice celery, carrot and coriander.
  • Add in the minced prawn, season slightly and mix well.
  • Soften the bean curd wrappers by wiping them with a wet cloth. Cut into uniform squares as wanton wrappers.
  • Put a spoonful of prawn mixture onto each of the wrappers, roll up and brush a little vegetable oil on the outside.
  • Put into the Airfryer and airfry at 180°C for 6 minutes. Dish out when finished.
  • Then add all the ingredients for the sauce (except coriander) into the Airfryer.
  • Mix well and airfry at 180°C for 8 minutes.
  • Stir in the coriander when finished. Pour the sauce over the prawn rolls to serve.
