Chicken Rice in Hai-nan Style

Ingredients

  • Chicken 400g
  • Thai hom mali rice 2 cups
  • Fried garlic 1 tbsp
  • Fried shallot 1 tbsp
  • Pandan leaves 10g
  • Chicken fat, as appropriate
  • Chicken stock, as appropriate
  • Some coarse salt

Directions

  • 1. Wash the chicken and wipe dry , rub with coarse salt and marinade for 30 minutes.
  • 2. Rinse the rice, add in fried garlic and shallot, and mix well.
  • 3. Put the rice mixture into the inner pot of rice cooker. Add chicken stock up to “Rice” level 2 as indicated on the scale inside the inner pot.
  • 4. Add in the chicken fat, pandan leaves and chicken.
  • 5. Close the lid, switch on the power, select the “Rice” function, and press “Start” to cook.
  • 6. When the cooking is done, leave the rice to rest for 10 minutes.
  • 7. Cut the chicken into pieces, and serve with rice.
