Yakibuta
(Japanese Roast Pork)

Ingredients

  • Pork belly 700g
  • Japanese leek (cut in sections) 100g
  • Garlic 10g
  • Celery (cut in sections) 50g
  • Pearl onion 20g
  • Shallot 20g
  • Japanese daikon (cut in chunks) 50g
  • Japanese soy sauce 50g
  • Mirin 50g
  • Chinese yellow wine 100g
  • Kelp and flying fish soup stock 200g
  • Bay leaf 4 pcs
  • Rock sugar 10g
  • Coarse salt, as appropriate

Directions

  • 1. Rub the pork belly with coarse salt and leave for 30 minutes.
  • 2. Roll the pork belly into a tight cylinder and tie with a kitchen twine.
  • 3. Put the pork belly together with the other ingredients in the inner pot of the rice cooker.
  • 4. Close the lid, switch on the power, select the “Stew” function, set the cooking time for “2 hours” and press “Start” to cook.
  • 5. When finished, turn the pork belly over.
  • 6. Close the lid, select the “Stew” function, set the cooking time for another “2 hours” and press “Start” to cook.
  • 7. When finished, cut into slices to serve.
