Ingredients

  • Fresh pork knuckle (blanched, cut into chunks) 1000g
  • Onion (peeled, cut into rings) 300g
  • Italian balsamic vinegar 120g
  • Port wine (Fine Ruby) 200g
  • Diced garlic 30g
  • Diced dried shallot 30g
  • Bay leaf 1g
  • Fresh sage 5g
  • Olive oil 20g
  • Sea salt 5g
  • Slab cane sugar 80g

Directions

  • 1. Press to select Multi cook Saute/Sear, set the cooking time for 12 minutes. Press Start.
  • 2. Add olive oil into the All-in-One cooker, add garlic and shallot, sauté for 4 minutes; add onion, sauté for 4 minutes; add pork knuckle, sauté for 4 minutes. Add the rest of the ingredients and stir well.
  • 3. Close and lock the lid, select Pressure cook Poultry, set the cooking time for 25 minutes. Press Start.
  • 4. When finished, unlock and open the lid. Press Sauce thickening button, set the cooking time for 10 minutes. Press Start and keep the lid open. When finished, serve the food hot.
  • *The preheat time of Sauté/Sear may take up to 5 minutes.
  • Chef’s tip: # Beware of steam, the pressure will be released automatically after the cooking completes.
